Time and temperature in preparations
Time and temperature change the speed and direction of a biological process, which is why your formula gives times and it pays to record them. As an example, a module of the main line says to ferment 52 hours at 22 to 28 °C, covered with cloth, and keep it 5 to 7 days refrigerated.
In detail
- Note the start time and the room temperature of each preparation.
- If your environment is outside the stated range, do not force the process: check the entry or write to us.
- Store the preparation as your formula says and respect its shelf life.
