What it is

What Gourmet Lab is and who it is for

Gourmet Lab is Yolia's laboratory for crops sold for their sensory quality. When you choose this specialty, the engine changes its priorities: it raises Brix support, flavor and aromatic metabolites, potassium with sugars, fruit filling and firmness, and watches that strong nitrogen does not get in the way during fruiting and ripening.

You receive a process: diagnosis, phased strategy, a formula made with preparations that you make yourself (ferments, infusions and teas from common ingredients), a logbook with control plants, a harvest-window notice and recalibrations when the evidence justifies it. You do not receive a bottled product.

It's for you if…

You sell on quality, not volume: sweetness, aroma, firmness, color or flavor are your selling point.
Your crop is fruiting or close to harvest and you want to decide with evidence, not intuition.
Cultivas fruta, hortaliza o hierbas de alto valor en invernadero o campo.
You are willing to measure (Brix, firmness, tasting) to check what Yolia suggests.
You can prepare ferments and infusions and keep a logbook.

It's not for you if…

You want more weight or more yield: this laboratory aims at quality, not tonnage.
You expect Yolia to measure Brix or firmness for you: it has no sensors and does not analyze photos for that.
You want a ready-to-apply product, without preparing anything.
Necesitas garantía de dulzor o de aroma.
Your main problem is one of management (irrigation, light, fruit load): the formula does not correct it.
Ciencia explicada fácil

Where the flavor of a fruit comes from and where Yolia can help

Flavor is not one single thing: it is the balance between sugars (measured as Brix degrees), acids (acidity), volatile aromatic compounds and texture. A very sweet fruit without acidity turns out flat; an acidic one without sugar turns out sour. That is why Gourmet Lab has separate objectives for sweetness, acidity, aroma and flavor, and not a single one called “quality”.

The sugars in the fruit come from the photosynthesis of the leaves; potassium takes part in moving them to the fruit, and a certain water restriction near harvest tends to concentrate sugars, though at the cost of weight. Excess nitrogen tends to fatten foliage and to delay or dilute ripening; that is why the engine blocks strong nitrogen during fruiting and ripening.

Aroma depends on secondary metabolites that accumulate mostly during ripening and are lost with excessive heat and prolonged storage. When you cut weighs as much as what you applied: that is why Yolia includes a harvest-window notice according to your destination.

What comes already decided

La variedad y su techo de dulzor y aroma.
Fruit load per plant: more fruit, less sugar per fruit.
The total light the crop received during the cycle.
La cadena poscosecha: frío, transporte y tiempo.

What Yolia can modulate

The support of sugars and potassium during filling.
Nitrogen balance in fruit and ripening.
Hydration and tissue firmness (calcium).
Color, through pigments and antioxidants.
The harvest timing, with a notice based on your calendar and your destination.
Targets

The 10 goals of the Gourmet Laboratory, one by one

Each objective is explained with four things: what it means, how the engine works it, what is worth noting in your logbook and where the honest limit lies. A real case activates 1 to 4 objectives at a time, not all of them: more objectives is not better, because they compete for the same plant resources.

01

Brix degrees and sweetness

What it is. The concentration of sugars in the fruit, measured with a refractometer.

Cómo lo trabajamos. Brix support (1.35), sugars with potassium and potassium from peels. Example modules: XC-17 (beet, turmeric and raisins: fermented sugars and antioxidants), XC-16 (banana, apple and cereal: potassium, pectins and energy) and XC-20 (sweet biofilm with chia and honey).

What to write in your logbook. Brix of 3 fruits per control plant, measured at the same time and in the same stage, with a refractometer.

Límite honesto. Yolia does not measure Brix. Sweetness depends a lot on the variety, the fruit load and the light; the formula supports, it does not guarantee.

02

Acid balance

What it is. A pleasant acidity that balances the sweetness.

Cómo lo trabajamos. Mild organic acids and pH stability. Example modules: XC-19 (apple and vinegar in short maceration: malic acid and balance of the fruit's pH) and XC-22 (apple and orange: natural acids that improve flavor and freshness).

What to write in your logbook. A simple pH or acidity measurement, or a blind tasting against the control plant.

Límite honesto. Acidity and sweetness tend to move in opposite directions with ripening and climate. “Sweeter and more acidic” at the same time is not promised.

03

Aroma

What it is. Intensity and cleanness of the crop's fragrance.

Cómo lo trabajamos. Flavor, aroma and metabolites is the function with the most weight in this specialty (1.40). Example modules: XC-23 (rosemary and mint: aromatic oils) and XC-18 (anise, cinnamon and clove: deep aromatic profile).

What to write in your logbook. A simple smell note (none, mild, medium, strong), by the same person at the same time, against a control plant.

Límite honesto. Aroma depends on variety, heat, and cutting time. Asking for a much more intense profile close to harvest is precisely the case the system treats with caution.

04

Flavor

What it is. The overall impression of the balance between sweetness, acidity, aroma and texture.

Cómo lo trabajamos. It is the result of the previous ones; the engine works on it as a whole. XC-24 (bay laurel and ginger: they reduce the astringency of ripe fruit) supports a smoother flavor.

What to write in your logbook. A blind tasting of treated plants against control plants, with a simple 1-to-5 scale.

Límite honesto. Taste is subjective. That is why it is best to always compare against a control and with several people.

05

Color

What it is. More intense and even color in the fruit or leaf.

Cómo lo trabajamos. Pigments and antioxidants (1.00 in this specialty). Example module: XC-15 (carrot, sweet potato and beet: carotenoids and reserve sugars).

What to write in your logbook. Photos with the same light, background and distance, compared against the control.

Límite honesto. Color depends on variety, light, and temperature. Excessive heat and radiation wear it down more than a formula improves it.

06

Texture

What it is. The feel when you bite: crisp, juicy, mealy.

Cómo lo trabajamos. Hydration, pectins and cell structure. Example modules: F-14 (banana and apple: potassium and pectins) and XB-12 (pineapple and papaya: mild enzymes that support firmness).

What to write in your logbook. A blind touch or bite test, and if you have a penetrometer, its reading.

Límite honesto. Texture changes a lot with harvest timing and storage.

07

Firmness

What it is. Firm fruit that withstands handling and transport.

Cómo lo trabajamos. Structural calcium, potassium and firm fruit fill (1.10). Example: XB-10 (bioavailable calcium, designed for firm fruit set without blossom-end rot).

What to write in your logbook. Firmness by touch or with a penetrometer, and fruit damaged in transport.

Límite honesto. Calcium only reaches the fruit with good irrigation and a healthy root; the formula does not make up for irregular irrigation.

08

Uniformity

What it is. Fruit uniform in size, color and ripeness.

Cómo lo trabajamos. The formula is scaled to your number of plants and monitored with control plants per sector. More sectors and more plants raise the control plant target up to 10.

What to write in your logbook. The variation among control plants from different sectors in Brix, color and harvest date.

Límite honesto. La uniformidad depende de riego y luz parejos.

09

Harvest time

What it is. Cutting at the right point of ripeness according to the destination.

Cómo lo trabajamos. Yolia calculates a theoretical date of the optimal point and suggests cutting 0 days earlier for local sale, 2 for national and 5 for export, because the product keeps ripening along the way. If there is a serious alert over the final stretch, it recommends bringing the cut forward.

What to write in your logbook. The actual cut date, the destination and the condition of each batch on arrival.

Límite honesto. It's a calendar estimate, not a reading of your plant. Yolia doesn't analyze photos yet to decide the harvest point.

10

Postharvest life

What it is. So that the product lasts longer on the shelf.

Cómo lo trabajamos. Firmness, hydration and a harvest at the right stage. Below we explain what depends on us and what doesn't.

What to write in your logbook. Days until the produce loses firmness or appearance, in treated versus control samples.

Límite honesto. We do not promise a number of extra days. The cold chain and handling weigh more.

Do you already know which goal you want to work on in Gourmet?

How the engine decides

What the engine prioritizes when the case is Gourmet

When you choose Gourmet, the engine raises these functions before building your formula. These are the real weights it uses for this specialty.

Function the engine reinforcesPriorityWhat it is for, in simple language
Sabor, aroma y metabolitos1.40Aroma and flavor quality: secondary compounds the plant makes when it has energy and minerals.
Soporte de Brix (dulzor)1.35Supports sugar accumulation in the fruit or harvestable tissue.
Sugars with potassium1.15Energy and potassium together, useful during filling and ripening stages.
Potassium from peels (fruiting)1.10Plant-based potassium for fruiting; not simple sugar.
Fruit sizing, ripening, and firmness1.10Supports fruit filling and its firmness as it ripens.
Pigments and antioxidants1.00Support for color and the antioxidant defense of tissues.

Priority is a real relative weight of the engine: above 1.00 the function is reinforced, below 1.00 it is kept gentle. It is not an improvement percentage or a promise of results.

And the stage of your plant changes what gets prioritized

Before mixing anything, the engine reads the stage you declare. That is why the same plant gets a different strategy when rooting than when flowering.

StageWhat drives the engineQué evita o bloquea
GerminationRaíz y pelos absorbentes, fósforo y zinc de semillas, nitrógeno de arranque moderadoExcesos de nitrógeno
Enraizamiento / trasplanteRoot (the highest priority of this stage), phosphorus and zinc, biosignalsOverloading with flower goals

FloweringFlowering, pollen and fruit set (highest priority), phosphorus and zinc, calcium, gentle defenseNitrógeno vegetativo y de germinados: queda bloqueado

MaturationEngorde y firmeza, Brix, sabor y aroma, control de exceso de nitrógenoNitrógeno vegetativo y de germinados: queda bloqueado
Measure what you promise

How to check each objective on your own plot

Yolia has no sensors and does not analyze photos to measure quality. But you can measure, and the results go into your logbook as evidence. These are the most useful measurements, always comparing against an untreated control plant.

Dulzor

Refractómetro

A portable refractometer measures degrees Brix in a drop of juice. Measure 3 fruits per control plant, at the same time of day and at the same stage.

Acidez

pH o cata

A pH strip or meter, or a blind tasting against the control plant. What matters is the comparison, not the absolute value.

Firmness

Penetrómetro o tacto

If you have a penetrometer, always measure at the same point on the fruit. If not, use a touch test done by the same person.

Aroma and flavor

Cata a ciegas

With several people, not knowing which is which, on a scale of 1 to 5. A control plant always alongside.

Destino de la cosecha

Local, national or export: why the cut day changes

When your program nears its end, Yolia calculates a theoretical date on which the crop reaches its optimal point, and adjusts it according to where your harvest is going. The reason is simple: if the product travels far, it keeps ripening along the way.

Mercado local

0 días antes

Immediate consumption: you can wait until the last day of the optimal point.

Mercado nacional

2 días antes

Medium distribution: the cut is moved up 2 days to make up for transit time.

International export

5 días antes

Long transit and customs: the cut is moved up 5 days so it arrives at the right stage.

Climate

How climate factors into the Gourmet Laboratory

In a gourmet crop the climate weighs twice: during the cycle, because high heat and radiation wear down aroma and color, and near harvest, because a storm or a frost can ruin weeks of work. Yolia confirms your location, reads the 7-day forecast and the history, and evaluates your environment.

Condition the engine detectsUmbral realWhat functions it reinforces
Calor extremo y sequedadMaximum of 32 °C or more with little available waterElectrolytes and cellular hydration, drought defense, antioxidant pigments, radiation/PAR, root
Frío y riesgo de mínimaMínima de 8 °C o menosAnti-estrés antioxidante, carbohidratos fermentables, raíz, balance carbono-nitrógeno
Humedad alta y drenaje pobreHumidity of 78% or more with poor drainageDefensa contra exceso de humedad, defensa biológica, silicio, raíz
Low oxygenation in the rootLow or very low root oxygenationRaíz, defensa contra exceso de humedad, control de salinidad, silicio
Tierra pobreMateria orgánica de 2% o menosMicrobiología húmica, transporte mineral, raíz, proteína y aminoácidos
Salinidad altaWater conductivity of 1.4 mS/cm or moreControl de salinidad, vehículo de agua segura, transporte mineral
Indoor with limited lightIndoor growing with 250 µmol/m²/s of PAR light or lessMagnesio y clorofila, verdes minerales, balance carbono-nitrógeno
Greenhouse with heat and humidityGreenhouse with humidity of 75% or moreDefense against excess humidity, silicon, radiation management
Outdoors with windOutdoors with wind of 25 km/h or moreWind and evaporation, silicon, structural calcium, drought defense
High radiationPAR light of 900 µmol/m²/s or moreManagement of radiation, antioxidant pigments, electrolytes

These are the ten real contexts the engine evaluates. If your case meets one, those functions rise in priority; if it meets several, they are combined. If you do not declare a piece of data, the engine flags it as missing instead of inventing it.

What weighs most in Gourmet

High radiation (900 or more): adds light, pigment and electrolyte management to protect color and aroma.
Extreme heat with little water: reinforces cellular hydration and defense against drought.
Greenhouse with humidity of 75% or more: adds moisture-excess defense and silicon.
Wind outdoors: adds silicon and calcium to support plant and fruit.
Final alerts for frost, storm, heavy rain or strong wind: they can trigger the emergency cut notice.

Alertas de clima reales (pronóstico de 7 días)

Thunderstorm or hailstorm (according to the forecast)
Frost risk: temperatura de 1.5 °C o menos fuera de interior
Intense heat in open field: 35 °C or more
Possible greenhouse overheating (estimate of 36 °C or more; must be verified with a sensor)
Strong wind gusts: 50 km/h or more outdoors
Likely heavy rain: 10 mm or more with a probability of 60% or more
Possible pot heating: 30 °C or more with high radiation
Indoor condensation risk, based on your last saved measurement

What Yolia does with an alert. If there is an alert crítica, the system holds back the field application. If it is high, requires a balanced review and lowers the boost mode to “balanced”. The forecast comes from Open-Meteo (7 days, hourly) and the multi-year climate history of your location; a location confirmed on the map is needed for this to work.

Ventana de cosecha y corte de emergencia. Yolia calculates a theoretical date of the optimal point according to the real progress of your program and, depending on the destination (local, national or export), suggests cutting 0, 2 or 5 days earlier. If a serious alert (frost, storm, heavy rain, strong wind) falls on the final stretch, it recommends bringing the cut forward. Límite honesto: it is a calendar-based estimate, not a reading of your plant; Yolia does not yet analyze photos to decide the harvest point.

Emergency cutting is one of the most useful functions in gourmet cultivation: when a serious threat falls on the final stretch, the system recommends bringing the cut forward so as not to lose the entire harvest, regardless of destination.

Your climate changes your formula. See the plans and start with your location.

Postharvest life

How much the product holds up: what depends on us and what does not

With fruit and vegetables, shelf life is decided long after it leaves your plot. Every extra degree in transport and every day of waiting counts.

On the crop side, fruit growing recognizes that tissue firmness and water status have an influence. In Yolia it is a declared objective and is evaluated against your control plants, not a promised number.

What determines shelf life

Madurez al corte.
Temperature and humidity during transport.
The product's sensitivity to ethylene.
Heridas y manejo.
Tiempo entre corte y consumo.
Variedad.

Where Yolia can indeed help

Firmeza de tejidos: calcio y potasio.
Stable hydration.
Harvest window according to the destination.
Corte de emergencia ante clima.
Compare it against control plants in your logbook.

What Yolia does not control

La cadena de frío.
Transport and handling.
The time until consumption.
La genética de la variedad.
Promise you a number of extra days.

If someone promises you “X more days of shelf life” without comparing against a control plant of your own, be wary. What we can give you is the method to check it in your own batch.

How the modules are mixed

A schedule of 8 phases, not a single mix

A Yolia module is a unit of plant biochemistry: a controlled process (fermentation, infusion or extraction) with declared ingredients, times, pH and yield. The engine chooses modules from a catalog organized into four product families, measures how much load each phase can bear and places them at the right physiological moment. If two modules clash, they are not removed: they are separated into different phases.

1

Hour 0 · Bioactivation, signaling and transport

Prepares uptake, membranes, signaling and internal circulation. Root or foliar route depending on the module.

2

Hour 12 · Root, soil, water and oxygenation

Improves root, rhizosphere, water, aeration and availability. Root pathway.

3

Hour 24 · Núcleo madre: Biokit y pulso nutricional

Entrega energía, proteína, minerales y la base funcional fuerte. Vía radicular.

4

Hour 36 · Vegetative and structural specialization

Crecimiento, clorofila, tallo y arquitectura. Vía radicular o foliar.

5

Hour 48 · Flower, fruit and quality specialization

Directs resources to flowering, fruit set, fruit, aroma, color, and firmness.

6

Hour 60 · Defense and adaptation

Buffers against heat, cold, drought, humidity, wind, radiation and salinity.

7

Hour 72 · Reinforcement, replenishment and reserve mobilization

Replenishes, mobilizes reserves and sustains the plant's response.

8

Hour 96 · Conditional or separate correction

It is applied only when the condition or a measurement triggers it.

Reglas de compatibilidad reales

Strong nitrogen is blocked during flowering, fruiting, and ripening, unless a specialist reviews it.
Acidic and alkaline modules are prepared and diluted separately; their concentrates are never mixed.
Calcium and phosphate are kept in separate preparations until the final dilution, to reduce the risk of precipitation.
Retention and biofilm are blocked when there is waterlogging or severe low oxygenation at the root.
Two modules that should not go together but both add value are split into separate phases, at least 24 hours apart, instead of dropping one.
There are recognized synergies that the engine rewards: calcium with silicon, root with phosphorus and zinc, potassium with Brix, biosignals with amino acids, microbiology with mineral transport.

Límites de carga

Each phase has a maximum capacity; if a module exceeds it, it does not enter that phase.
In stress contexts (heat, cold, wind, humidity…), the capacity of each phase drops to as low as 28%.
The engine measures the risk of waste and saturation and keeps them below 92% saturation.
Goals active at once are limited to 3 or 4 (fewer on conservative routes).

Real examples of modules the engine can use in Gourmet

They are real modules from the catalog. Which one is chosen in your case, in what phase and in what quantity depends on your plant, your stage, your climate and your logbook; the exact quantities are only shown in your formula, not on this page or in the Sandbox.

Logbook and evidence

Your logbook is what allows the formula to be adjusted

Without evidence, the system cannot correct anything: that is why the logbook is not decoration. You record notes and photos throughout the program and follow a few control plants —a representative group that you observe closely— to compare against the rest. With 1 plant, that whole plant is followed; up to 4 plants, all are followed; from 5 to 20, 3 are followed; from 21 to 500, 5; and from 501 to 5,000, 10.

Qué conviene anotar

Brix of 3 fruits per control plant, at the same time and stage.
Blind tasting from 1 to 5 against a control plant, with several people.
Firmness (touch or penetrometer) and color with a photo.
Fruit load per plant (how many fruits you left).
Irrigation, temperature and radiation in the period before harvest.
Cutting date, destination and condition of the batch on arrival.
Vigor de 1 a 5 y síntomas.
Date of each application: phase and module.

The program has real milestones

Day 0: expediente y alcance confirmados.
Day 3: evidencia inicial y plantas de seguimiento.
Day: fórmula o estrategia científica inicial (en Diagnóstico, diagnóstico y ruta recomendada).
Between day 7 and 14: first response review.
Up to day 21: recalibration, if your plan includes it and the evidence justifies it.
At the end: cierre honesto del caso con un resultado declarado.

Recalibration, no silent changes. When it is recalibrated, all 21 engines are run again in full with your new evidence. The previous formula is never deleted and each change leaves a visible event that you can consult. There is a manual recalibration, an automatic notice (when uploading a note, it only recommends and requires at least 14 days since the last adjustment) and, only in Resin & Trichomes Lab, an automatic recalibration with a verified photo. The plans include 0 (Diagnosis), 1 (Targeted formula) or 3 (Advanced laboratory); an additional one requires a new quote.

Fruit load is the detail most often forgotten and the one that best explains Brix: two plants with the same formula can give fruit with very different sweetness just because of how many fruits you left.

Un caso real, paso a paso

A more intense profile is requested near harvest

This is one of the Sandbox's example cases: a gourmet crop in a greenhouse in Spain, 100 plants, at fruiting and with medium risk. The Sandbox uses the same engine, but never shows ingredients or doses.

1

Step 1 · Base profile

It starts from the current sensory profile of your crop.

2

Step 2 · water

Water and irrigation are checked, as they influence sweetness and firmness.

3

Step 3 · Stage

The real stage is confirmed: fruiting, not ripening yet.

4

Step 4 · Aroma

The aroma goal is set out along with its limits.

5

Step 5 · Harvest

The harvest window is calculated according to your destination.

6

Step 6 · Closure

The case closes with a stated result.

A more intense profile is requested near harvest. What would the system do?

The safe choice

Review stage and limits

It's the one the Sandbox marks as safe: confirm the stage and limits before pushing a profile, because close to harvest there is little margin.

Sobrecarga

Increasing all goals without reviewing

Loading the plant with objectives right before the cut. The engine advises against it.

Uncertainty

Continue without evidence

Continuing without new data. The system asks for evidence before moving forward.

The lesson: near harvest there is less room to maneuver. The system prefers to check limits before pushing.

Verdad completa

What we can do and what we will never promise

This section exists for a reason: we would rather you not sign up than sign up expecting something we cannot deliver.

What we do

Raise the priority of Brix, flavor, potassium and firmness when the crop enters fruiting.
Blocking strong nitrogen during fruiting and ripening.
Calculate a harvest window based on your destination and warn of an emergency cut due to weather.
Building an 8-phase program and separating what must not be mixed.
Llevar bitácora y recalibrar dejando todo registrado.
Give you the step-by-step preparation with times, temperature, and target pH.

What we do not do or promise

Measuring Brix, acidity, firmness or aroma: it has no sensors and does not analyze photos for that.
Garantizar dulzor, aroma, color ni vida en anaquel.
Decide the harvest point by reading your plant: the window is a calendar estimate.
Corregir problemas de manejo (riego, luz, carga de fruta).
Replace sanitary management or a laboratory analysis when one is needed.
Promise results on a given date: each formula is marked as a prototype on the way to full experimental validation.
Pros y contras

Pros and cons of Gourmet Lab, no sugarcoating

A favor

Priorities designed for sensory quality, not for yield.
Aviso de ventana de cosecha según destino y corte de emergencia ante clima.
It teaches you to verify each goal with Brix, tasting and control plants.
Strong nitrogen is blocked during fruiting and ripening.
Evidence with control plants and transparent recalibration: the previous version is never deleted.
Try free in the Sandbox with the same engine.
The price drops with fewer plants.

En contra o a considerar

It measures nothing for you: you need a refractometer or a taste test to check.
It's a prototype: it doesn't have full experimental validation yet.
The harvest window is a calendar estimate, not a reading of the plant.
Requiere preparar fermentos de 50 a 72 horas y llevar bitácora.
The included recalibrations are limited (0, 1 or 3 depending on the plan).
It's a one-time payment for the whole program: there are no monthly fees, but the total depends on how many days it lasts (more days, more to pay).

Compared with the rest of the world

A field advisor or a commercial fertilization program may have years of trials and guaranteed analysis; Yolia does not have that yet. What it does offer, and you can verify for free in the Sandbox, is a system that prioritizes sensory quality, blocks strong nitrogen once it is fruit, warns of the harvest window according to your destination and leaves evidence you can audit. We do not compare Yolia against other brands because we do not have independent tests to do so.

If, after reading all this, it makes sense to you, the next step is to choose a tier.

Qué nivel elegir

One-time payment per program, processed by Stripe, with no automatic renewal. The large price is the one for 1 plant (the lowest); with more plants the price rises according to each card's list, and with each additional goal $2 USD is added to the one-time payment before the scope factor. Every Yolia formula is honestly marked as a prototype, still on its way to full experimental validation.
